BUSH’S® Organic Garbanzo Bean Salad

Ingredients for salad:
2 ears corn
2 tablespoons olive oil
1 can (16 ounce) BUSH’S® Organic Garbanzo Beans,
drained and rinsed
½ cup roasted red peppers, sliced
2 tablespoons parsley, chopped
24 each raw, tail off, peeled and deveined shrimp
Optional: salt and pepper, to taste
1 each lemon
½ cup Feta Cheese 1 cup arugula
Ingredients for dressing:
1 tablespoon spicy brown mustard
2 tablespoons balsamic vinegar
¼ cup extra virgin olive oil
3 tablespoons orange juice, freshly squeezed or store bought
1 tablespoon garlic, chopped
Optional: salt and pepper, to taste
Directions for salad:
1) Preheat oven to 400 degrees F.
2) Remove corn husk, toss corn in 1 tablespoon olive oil, roast on baking sheet for 10 minutes.
3) Cool corn. Use sharp knife to remove corn kernels.
4) Rinse and drain the BUSH’S® Organic Garbanzo Beans.
5) In large bowl, combine corn, BUSH’S® Organic Garbanzo Beans, red peppers and parsley. Add dressing* to salad and toss. Season with salt and pepper to taste. Set aside.
6) Season shrimp with salt and pepper and sauté in small saucepan on high heat with 1 tablespoon olive oil for 2-3 minutes per side or until fully cooked. Top salad with shrimp.
7) Serve with optional ingredients including lemon, Feta Cheese and arugula, as desired.

Directions for dressing:
1) In small bowl, whisk all ingredients for dressing until combined. Add salt and pepper to taste. **Tip: If you’re short on time, use balsamic dressing to substitute.
