Recipe:
Ingredients – Serves 4
4 Medium-Sized Sweet Potatoes, Washed Well and Dried
2 Tbsp Extra Virgin Olive Oil, Divided
1 Tsp Kosher Salt
1 Tbsp Local Honey
¼ C Sun-Maid Raisins

Directions
Pre-heat oven to 350°F.
Place the washed sweet potatoes on a baking sheet and bake for 45 minutes or until tender.
Remove the sweet potatoes from the oven and let cool completely.
Remove the top (horizontal) ¼ inch of the potatoes to reveal the flesh, but still keeping the potatoes intact.
Gently scoop out the sweet potatoes into a mixing bowl. Place the potato “shells” on a baking sheet and set aside.
Add salt, 1 tablespoon of olive oil, and honey to the mixing bowl of cooked sweet potato. Using a fork, mash the potato and mix well. Stir in the raisins.
Spoon the sweet potato mixture back into the potato “shells”. Drizzle the remaining olive oil over the tops of the potatoes.
Return potatoes to oven and bake for an additional 15 minutes.
